Lectins are sugar-binding proteins that mimic insulin. They bind to carbohydrates, and to various proteins. This binding action can cause inflammation. The Lectin-Free diet restricts things like grains, nightshades (ie. peppers, tomatoes, potatoes), legumes (ie. beans) and some starches.
