What is Ascorbic Acid? Vitamin C or ascorbic acid (L-ascorbate) is an essential nutrient required for a range of metabolic reactions in all animals and plants. It is made internally by most organisms, but not in humans. Deficiency causes scurvy in humans. It is also widely used as a food additive.
